Mussels are a family of bivalve sea molluscs that can be used to make very sumptuous dishes. You can find mussels under a crust of herbs, pancetta and rusks in Italian cuisine, such a dish is not suitable for everyday life, it must decorate the festive table.

It is necessary

  • For six servings:
  • - 1 kg of mussels in shells;
  • - 1/4 cup dry white wine;
  • 1/4 cup olive oil
  • - 1/2 cup crushed crackers;
  • - 3 tbsp. spoons of chopped parsley and pancetta;
  • - 1 lemon;
  • - 2 tbsp. tablespoons of chopped garlic;
  • - 1/2 teaspoon dried oregano.

Instructions

Step 1

Bring the wine to a boil in a saucepan, add mussels to it, cover with a lid. Cook the mussels until they open, then transfer them to a bowl.

Step 2

Do not rush to pour out the wine. Strain it through a sieve, return to the stove, evaporate to 1/4 cup.

Step 3

Open the mussels, remove the meatless shells.

Step 4

Cover a baking sheet with foil, put mussels with meat.

Step 5

Heat half of the olive oil in a skillet, fry the pancetta until golden brown. Add garlic, mix. Next, send the herbs with breadcrumbs to the pan, cook until golden brown over low heat. Then remove from the stove.

Step 6

Preheat your grill in the oven.

Step 7

Place some herbal mixture on top of each mussel, press down a little. Drizzle with oil, pour over with wine. Place a baking sheet under the grill and the mussels should brown.

Step 8

Serve the finished dish, garnish with lemon wedges.
