Chocolate meringue is a very delicate dessert made from whipped egg whites and sugar. You can make a real work of art by making a dessert with orange chocolate and pistachio chips.

- Per serving:
- - 115 g of powdered sugar;
- - 110 g of sugar;
- - 85 g of dark chocolate;
- - 40 g of butter;
- - 12 g of cocoa powder;
- - 4 egg whites;
- - 4 tbsp. tablespoons of unsalted pistachios;
- - 1 teaspoon of orange peel;
- - 1/2 teaspoon of lemon juice.
Instructions
Step 1
Combine the cocoa and powdered sugar in a small bowl. Beat the whites in the mixer bowl until foamy, pour in the lemon juice, beat on medium speed, adding 1 tbsp. a spoonful of sugar. Increase the speed of the mixer, when soft peaks appear, add another spoonful of sugar. Add the remaining sugar, continue beating until stiff peaks.
Step 2
Pour the mixture of powder and cocoa into the proteins, stir with a spatula. Put the mixture in a pastry bag, place small circles on a baking sheet. Leave to dry for 1 hour. The mass should not stick to the finger.
Step 3
Bake the meringues for 1 hour at 90 degrees, then let them cool, carefully remove from the parchment.
Step 4
Make a chocolate orange sauce. Break the chocolate into pieces, mix with butter, melt in a water bath. Add orange zest, stir, let cool.
Step 5
Cover the finished meringues with chocolate, sprinkle with chopped pistachios.
