- 100 g dried apricots;
- 100 g of walnuts.
- For Streusel:
- 150 g flour;
- 100 g butter;
- 75 g brown sugar;
- 2 tablespoons chopped walnuts
- grated zest of half a lemon.

Step 1
Start by preparing the filling. Pour boiling water over the walnut kernels and remove the dark film - it can be bitter. Toast the nuts in a skillet or oven for about 7-10 minutes for a richer flavor. Place the kernels in a mortar and lightly mash with a pestle to make a coarse crumb. Grind two tablespoons of nuts finely and set aside - they are useful for sprinkling.
Step 2
In a food processor bowl, combine cottage cheese, eggs, butter, sugar, sour cream, and lemon juice. Add a pinch of vanillin. The cream should be completely homogeneous, firm and shiny. Rinse dried apricots thoroughly, dry with a paper towel and cut into small cubes. Put chopped dried apricots and walnuts (part crushed into large crumbs) into the curd cream. Stir the mixture again.
Step 3
Get busy making dough. Beat butter with sugar until light. Add flour in portions while continuing to grind. Knead a soft dough. Grease a refractory deep mold with butter and pour the dough into it. Spread it along the bottom, crushing it with a spoon, so that you get an even layer. Bend the edges onto the walls of the form, forming sides. Put the curd filling on top of the dough and place the mold in the oven preheated to 180 ° C. Bake the pie 20 minutes until half cooked.
Step 4
While the cake is baking, prepare a streusel, a butter-flour crumb for sprinkling. Pour flour into a deep bowl, mix it with baking powder. Grind the flour and butter until you get coarse crumbs, add brown sugar, finely crushed walnuts and lemon zest to the mixture.
Step 5
Sprinkle with streusel over the cake and return to the oven. Bake for about 40 minutes - the flour crumbs should take on a beautiful golden hue. Remove the baking dish from the oven and chill the cake. Serve whole or cut into nice, even slices.
