Salmon soup with cream can be made at home, you will need the following products:

- 1 kg of scraps and heads of salmon;

Preparation

The salmon soup set must be placed along with the bay leaf and a whole head of onion in a saucepan. The ingredients are poured over with water, after which everything is put on medium heat. As soon as the liquid in the saucepan boils, you need to reduce the heat and simmer the fish broth for 30 minutes, removing the foam from time to time with a strainer. After half an hour, the fish should be removed from the broth with a slotted spoon. Strain it through a fine sieve and pour into a clean saucepan. Then carrots, leeks and potatoes are added to the broth, which should first be cut into cubes. The soup should be cooked over moderate heat until the ingredients are fully cooked for about 25 minutes. After that, the salmon fillet, cut into small pieces, is added to the broth. The fire will need to be increased to maximum, immediately add the cream to the soup and bring it to a boil.

The final stage

At the end of the preparation of the soup, you need to add finely chopped herbs to it. Then it is salted and spiced to taste. Then you need to remove it from the heat, cover with a lid and place in a thermo-bag for 15-20 minutes so that it is infused. After this time, the soup can be poured into bowls and served. It can be garnished with finely chopped herbs. It is also recommended to sprinkle the soup with grated cheese on top. This will give it an unusual taste.

Instead of salmon, you can use another red fish, the taste of the soup will not be worse. Cream is easily replaced with sour cream or milk, but only a few tablespoons of flour should be added to them. However, the taste of the dish will be slightly different, but that doesn't mean that you won't like it. Here you can experiment, then you will be able to cook a soup that will suit you in all respects. So, if it turns out to be too liquid, then you should add another potato to it. It will need to be grated on a fine grater and added to the soup along with other vegetables. If the purchase of salmon fillets hits the family budget, then you can get by with a soup set. However, it will need to take twice as much for the soup. The finished dish will turn out to be just as tasty and aromatic.
