Chicken liver is a valuable source of protein and iron. An additional advantage of this offal is a delicate soft taste and quick preparation. To keep the liver tender and juicy, first fry it over high heat, and then add to the pasta sauce.
It is necessary
- - 450 g of chicken liver;
- - 400 g of pasta;
- - 300 g cherry tomatoes;
- - vegetable oil for frying;
- - 4 tbsp. tablespoons of tomato paste;
- - 150 ml of vegetable broth;
- - 1 red onion;
- - 2 cloves of garlic;
- - salt;
- - freshly ground black pepper;
- - a bunch of basil and parsley.

Step 1
Chicken liver pasta is perfect for a family lunch or dinner. If you want to serve it to the festive table, you can add a little white dry wine to the sauce, replacing it with vinegar.

Rinse the chicken liver, remove the films and pat dry. Heat refined vegetable oil in a deep skillet and add the liver. While stirring, fry for about 5 minutes, then remove with a slotted spoon and set aside. Place the cherry tomatoes cut into halves in a skillet and fry for 2 minutes. Remove the tomatoes and transfer to a separate bowl.
Step 3
Chop red onion and garlic, add some more vegetable oil. Simmer onion and garlic over low heat until soft. Then add tomato paste to the pan, pour in the vegetable broth and vinegar. Bring the mixture to a boil and cook for 5-7 minutes. Add roasted chicken liver, salt and freshly ground black pepper. While stirring, cook for 2-3 minutes, then add the sauteed tomatoes to the pan. Stir, turn off the stove and leave the sauce to sit under the lid.

Boil the pasta according to the instructions on the package. For this dish, choose long and flat pasta like tagliatteli. To prevent them from sticking together during cooking, add a spoonful of vegetable oil to the water. Chop parsley and basil finely. Put the pasta in a skillet with sauce, add chopped herbs, mix well. Divide the chicken pasta and pasta into warmed bowls. Garnish each serving with a couple of basil leaves and sprinkle with finely grated Parmesan cheese. Serve with chilled white or rosé wine.
