  • - chicken liver - 400 g;
  • - carrots - 1 pc;
  • - yolk - 2 pcs;
  • - leeks - 1 pc;
  • - parsley root - 1 pc;
  • - butter - 4 tbsp. spoons;
  • - cream - 200 g;
  • - flour - 2 tbsp. spoons;
  • - salt to taste.

Instructions

Step 1

Peel the liver from films and cut into small pieces. Fry it in butter along with chopped carrots, leeks and parsley root.

Step 2

As soon as the liver changes color, add 0.5 cups of broth to the pan and simmer for about 10 minutes. Cool the finished liver with vegetables a little and grind in a blender until smooth.

Step 3

In a deep saucepan or heavy saucepan, saute the flour in butter for a few minutes. Then add the remaining broth to it, mix everything and boil for 15 minutes, then strain the broth.

Step 4

Add chopped liver mass to the broth and bring to a boil. Pour the cream mixed with boiled egg yolks into a saucepan. Season with salt and add a little butter. Mix everything thoroughly, boil for a couple of minutes and turn off the heat.
