Cake "Athens" turns out to be very tender, tasty, light and amazing. This cake contains no flour. The biscuit has a nutty flavor. The treat is infused with orange-flavored custard.

- - 75 g granulated sugar
- - 3 egg whites
- - 2 oranges
- - 80 g icing sugar
- - 3 egg yolks
- - 7 g gelatin
- - 300 g cream cheese
- - 100 g of chocolate
- - 1 tbsp. cognac
- - 1 tbsp. l. cocoa powder
- - a pinch of salt
- - 275 ml cream
- - 50 orange slices
Instructions
Step 1
Prepare the dough. In a blender, grind 50 g of granulated sugar, starch and nuts until flour. Whisk egg whites and salt until firm foam. Add the nut mixture and mix by folding from the bottom up.
Step 2
Place the dough on a baking sheet lined with baking paper. Preheat oven to 180 degrees, place dough and bake for 25-35 minutes until golden brown. Check the readiness of the biscuit with a match, if it is dry, then you can get it out.
Step 3
Make an orange custard. Use a blender to puree the oranges. Soak gelatin in cool water and leave for 15-20 minutes. Mash 50 g of icing sugar and white yolks. Heat 175 ml of cream to 90 degrees and pour it into the yolk mass, stir vigorously until smooth. Simmer until thick, stirring occasionally. Remove from heat and add gelatin, stir. Add cognac and orange puree, stir until smooth. Cool it down. Whisk the cream cheese and icing sugar with a mixer. Add the cream to the cream and stir.
Step 4
Apply the cream to the biscuit and spread over the surface. Refrigerate for 1-2 hours.
Step 5
Prepare the chocolate frosting. Heat the cream to 90 degrees and add 100 g of chocolate, stir well and cover the cake with icing. Decorate the cake with orange slices.
