Stifado is a Greek roast. This dish is a meat stew with onions. Served as a side dish with rice.
It is necessary
- - 200 ml of dry red wine,
- - 10 peas of allspice,
- - ½ tsp carnations,
- - 3 bay leaves,
- - 50 ml of wine vinegar,
- - 3 cloves of garlic,
- - 1 tsp oregano,
- - 1 kg of beef,
- - 3 onion heads,
- - 1 cinnamon stick,
- - 2 red tomatoes,
- - 1 tbsp. tomato paste
- - salt and pepper to taste.
Instructions
Step 1
Mix wine with vinegar. Peas and cloves are poured in a mortar and added to the wine. Put bay leaf, cinnamon, oregano, garlic and 1 tsp. salt.
Step 2
Cut the meat into small pieces. Put it in the marinade, stir and leave in the refrigerator, preferably overnight, but you can do it for a couple of hours.
Step 3
Cut each head of the onion into 4 parts.

Heat 1 tablespoon in a heavy-bottomed roaster. sunflower oil. Put the onion there and fry, stirring occasionally, over low heat for 5 minutes. Add the tomato paste and continue to cook, stirring occasionally, for another 1 minute. Add the tomatoes, cut into small pieces. Then add the marinade meat, add enough hot water to cover the entire contents of the pan.
Step 5
Season to taste, bring to a boil, cover and simmer over low heat for about 1 hour. Then remove the lid and simmer for another 30-40 minutes until the meat is tender.
Step 6
Remove the bay leaf cinnamon from the pan, arrange the stew into bowls and serve, sprinkled with fresh herbs.
