The most delicate sockeye fillet in a creamy cheese crust is simply an amazing dish that will undoubtedly be appreciated by all members of your family. It is prepared quite simply and also quickly. Note that in the recipe, sockeye fillet is successfully supplemented with fresh dill, onions and suluguni, which makes it even tastier. Such a dish is worthy of taking a place both on the everyday and on the festive table.

- • 1 carcass of a sockeye salmon (weighing 1 kg);
- • 1 bunch of dill;
- • 1 large onion;
- • 150 g of suluguni cheese;
- • 100 g of parmesan;
- • 100 ml. 33% cream;
- • 4 eggs;
- • 1 tsp. salt;
- • 1 tsp. white pepper;
- • 70 g of butter.
Instructions
Step 1
Gut the carcass of a sockeye salmon and wash thoroughly, removing the head, tail and fins. In this case, the scales can not be removed at all, since in this fish it is very small and almost all of it dissolves during cooking.

Liberally grease a rectangular baking sheet with high sides.

From the prepared carcass, carefully remove the ridge and all the bones, without dividing it into two separate fillet pieces. Cut boneless sockeye salmon, unfold like a book and place in a baking sheet, skin side down. Season with salt and pepper to taste.

Finely chop the dill with a knife, chop the onion into rings, and chop the butter and suluguni into slices. Grate Parmesan on the coarsest grater.

Cover the fish in a baking sheet with a layer of onion rings, sprinkle the rings with dill, and cover the dill with plates of butter. Spread grated Parmesan loosely over the butter and spread the suluguni loosely.
