Gazpacho with snow crab is a delicious soup that everyone will love. By the way, this soup was originally a bread with garlic soaked in vegetable broth, even tomatoes were not added. Now this soup has become much tastier.
It is necessary
- For six servings:
- - crabs - 200 g;
- - tomatoes - 1 kg;
- - two bell peppers;
- - cucumbers - 500 g;
- - two cloves of garlic;
- - tomato juice - 500 ml;
- - olive oil, lemon juice;
- - one onion, chili pepper;
- - parsley, cilantro, sugar, salt, pepper - to taste.
Instructions
Step 1
In a blender, combine coarsely chopped tomatoes, bell peppers (peel it first), chili peppers, onions, cucumbers, garlic and parsley. You get a thick, mushy mixture of red color.
Step 2
Disassemble the snow crab into fibers, mix with a spoonful of olive oil, add cilantro leaves and lemon juice.
Step 3
Add two tablespoons of olive oil, lemon juice, tomato juice to the mushy mixture, salt and pepper, turn it all again in a blender.
Step 4
Pour ready-made cold soup into bowls, mix with snow crab and cilantro, garnish with parsley. Bon Appetit!
