  • - 110 g sugar
  • - 60 g butter,
  • - 3 eggs,
  • - 2 tbsp. tablespoons of lemon zest,
  • - 1 tbsp. a spoonful of vanilla sugar.

Instructions

Step 1

Put 60 grams of butter in a saucepan, melt over low heat.

Step 2

While the butter is melting, break three eggs into a bowl, add 110 grams of sugar and 1 tablespoon of vanilla sugar, beat until fluffy.

Step 3

While whisking, pour the egg whisk into a saucepan with the butter. Make sure that the butter in the saucepan is not hot, otherwise the egg mass will curdle.

Step 4

Beat for 20 seconds, constantly monitor the temperature, which should not exceed 60 degrees. Remove the saucepan from heat.

Step 5

Wash the lemon, dry it, rub the zest. Combine the zest with the lemon juice and cream.

Step 6

If the cream turns out to be liquid, then put it on low heat and cook with constant stirring to the desired thickness, then remove from heat and cool to room temperature.

Step 7

Whip the cooled cream with a mixer until firm foam. Gently mix the cream and lemon cream together. Divide the mousse into portioned bowls and leave in the refrigerator for 3-4 hours. Garnish with lemon half rings or mint sprigs before serving and serve chilled.
