A great option for a light lunch. Delicious fried dish that can be cooked in a matter of minutes.
It is necessary
- - Chabbat (Italian white bread or loaf) - 2 loaves;
- - Garlic - 1 head;
- - Olive oil - 2 tbsp. spoons;
- - Chicken breast fillet - 4 pcs.;
- - Onions - 1 pc.;
- - Pesto sauce - 4 tbsp. spoons;
- - Heavy cream - 5 tbsp. spoons;
- - Tomato - 3 pcs.;
- - Pine nuts - 2 tbsp. spoons;
- - Arugula or young spinach leaves, lettuce - 2 bunches.
Instructions
Step 1
Slice the Italian bread lengthwise. Cut the garlic cloves in half. Heat a large skillet to maximum. Rub all sides of the bread with garlic, brush with butter (1 tablespoon). Place the sliced side of the bread in the skillet. Roast for 1-2 minutes, then place on a baking sheet, toasted side up.
Step 2
Heat the remaining oil in a skillet and fry the chicken in it for 10 minutes, until clear juice comes out when pierced. After 5 minutes, add the onion and cook until golden brown.
Step 3
Preheat oven to medium heat. Combine the pesto sauce and cream in a bowl. Season with salt and pepper to taste. Place tomato slices on the bread. Sprinkle with ground pine nuts on top and cook for 2-3 minutes.
Step 4
Top the bread with arugula or spinach, or lettuce. Sprinkle the greens with chopped onions and drizzle the pesto and cream mixture over everything. Cut the chicken into slices and place on top. Season with pepper and serve.
