Zucchini is a truly unique vegetable. Zucchini can be fried, stewed, stuffed, made into caviar. And of course they can be pickled and salted. Recipes for harvesting this fruitful vegetable are numerous. For example, you can make crispy marinated zucchini for the winter.

It is necessary

  • - banks of any capacity;
  • - seaming machine;
  • - one and a half kilograms of zucchini;
  • - several umbrellas of dill;
  • - 3-4 sprigs of parsley;
  • - two leaves of horseradish and lavrushka;
  • - 2 liters of water;
  • - 3 tbsp / l of salt and sugar with a slide (100 g each);
  • - 150 ml vinegar 9% (7.5 st / l);
  • - 10 black peppercorns.

So what's the recipe for crispy zucchini? In order to prepare such an interesting blank, first prepare the jars correctly. Examine them in the most thorough way. The edges of the cans should be even, without chips.

Next, rinse the jars in running water with detergent, and then rinse them. Don't skip this step. Otherwise, the zucchini will quickly sour in the future or even explode. At least they won't be crispy.

Step 3

Crispy marinated zucchini is prepared for the winter, of course, not in just washed, but in sterilized jars. Steam all containers for sterilization. To do this, pour water into the kettle and wait for it to boil. Remove the lid from the kettle and hold each jar over the steam until a large amount of condensation forms - about 10-20 seconds.

Sterilize the lids. To do this, place them together with the rubber bands in a metal cup and boil for a couple of minutes.

The cans can also be sterilized in the oven if desired. To do this, first moisten them, and then place them on a baking sheet and place in a cold oven. Turn it on and leave the jars in it for 15 minutes. In this case, the lids are usually sterilized simultaneously with the cans.

To make crispy zucchini for the winter, cut the dill and garlic into small pieces first. Dill for this recipe is better to take still flowering. But you can also add a couple of umbrellas with seeds. Place chopped dill and garlic in the bottom of a washed, sterilized jar.

Cut the courgettes into round slices about 4 mm thick. Young, not too large vegetables are best suited for such a pickled zucchini recipe. But if you wish, you can use fairly large specimens. In this case, it is better to cut the circles in half or into 4 pieces, depending on the size of the vegetable.

Step 8

Place the sliced circles tightly in the jar. Place a few twigs and leaves of fresh parsley on top.

Fill all prepared jars following steps 6-8.

Prepare the marinade. To do this, pour clean, preferably filtered, water into a large saucepan. Add sugar, salt and peppercorns to it. After boiling water, add vinegar to the solution. Be sure to observe the dosage. In this case, it will be possible to get exactly delicious crispy zucchini.

Step 11

Pour the prepared solution into the jars of courgettes. This should be done at a time when the latter is still boiling. Be careful.

Step 12

Roll up the cans with sterilized lids. Store the squash in a cool place. This can be, for example, the cellar or the lower sections of the refrigerator.
