- 1 chicken egg;

Step 2
If you want to get minced meat close to the one that is obtained according to old recipes, it is important not only to collect several types of meat, but also to chop it with the help of several sharply sharpened knives. Indeed, in the old days there were no meat grinders, of course.

Minced sauerkraut From sauerkraut, squeeze the juice, pass it through a meat grinder. Cut the bacon into cubes and also pass through a meat grinder. Grate the onion on a fine grater. Combine the cabbage, lard and onion.

If you have a special trough and chop, then it is better to chop the squeezed cabbage, chopped bacon and onion with a chop, and not pass through a meat grinder. This will give the minced meat a sharper consistency.
