Ingredients:

  • 85 g of cow oil;
  • 2 chicken eggs;
  • 1 pinch of vanillin;
  • ½ teaspoon baking soda
  • 1 pinch of ginger;
  • 120 g of cottage cheese;
  • 250 ml of kefir;
  • 100 g granulated sugar and coconut;
  • 400 g pumpkin pulp;
  • 220 g of wheat flour.

Preparation:

  1. Wash the pumpkin well and remove the seeds and rind. The remaining pulp must be cut into small pieces and put in a saucepan. Then a little water is poured into the same container and the pumpkin is placed on the stove.
  2. After the pumpkin is soft enough, remove the pot from the stove and drain the liquid. If desired, the pumpkin can be prepared in the oven. It should be baked in the same way until soft.
  3. In order to prepare the dough, you need to break the eggs into a sufficiently deep bowl and add vanillin and granulated sugar there. Beat the resulting mixture a little with a regular fork or whisk.
  4. Then softened cow's butter is put into the dough and coconut flakes, as well as ginger are poured. Kefir is poured into the dough in a thin stream, after which the mass is thoroughly, and most importantly, quickly mixed.
  5. Then ½ part of the pre-sifted flour is poured into the dough. Using a spoon, mix the mixture gently so that the dough does not lose its airiness.
  6. Put the warm pumpkin in a blender and mash it. Sugar (to taste) is poured into the pumpkin mass and cottage cheese is laid out, previously passed through a meat grinder or wiped. Mix everything.
  7. Prepare a baking dish, for this it should be well oiled or covered with baking paper. Then the dough is carefully poured, and on top it is covered with a pumpkin-curd mass in an even layer. You can do it differently. Mix the dough with pumpkin and cottage cheese, and then transfer everything to a mold.
  8. Then the cake must be placed in a preheated oven. It will be ready in about 30 minutes. You can use a match or a toothpick to check the readiness of the test.
