Beetroot salad with walnuts
You will need:
- beets - 2 pcs.;
- onions - 1 pc.;
- basil - 1 bunch;
- walnut kernels - half a glass;
- vegetable oil - 1 tbsp. l.;
- salt to taste.
Preparation
Wash the beets. Pour cold water into a saucepan, bring to a boil and lower the beets. Cook the beets until tender over low heat for about 1, 5 - 2 hours. Peel the onions, rinse with cold water and finely chop into half rings. In a preheated pan, fry the onions in sunflower oil.
Peel the beets, rub on a coarse grater and add to the pan with fried onions. Season with salt, stir and fry a little with onions. Then basil greens (take only leaves) and walnut kernels, chop in a blender or cut with a knife. Remove the fried beets and onions from the heat, cool, add chopped herbs and nuts. Garnish with walnuts and drizzle with lemon juice before serving.
Potato roll
You will need:
- potatoes - 6 pcs.;
- coconut flakes - 2 tbsp. l.;
- sesame seeds - 2 tbsp. l.;
- parsley or cilantro - 1 bunch;
- hot red pepper to taste;
- sugar - 0.5 tsp;
- salt 0.5 tsp;
- flour - 200 g;
- turmeric - 0.5 tsp;
- vegetable oil - 2 tbsp. l.;
- water - 100 ml.
Preparation
Let's prepare the filling for the roll. Wash potatoes, peel and boil in salted water. When the potatoes are ready, you need to drain the water, mash them in mashed potatoes and add coconut flakes, a little hot red pepper, a little sugar and salt, and finely chopped greens. Leave the puree to cool.
Now let's prepare the dough for the roll. In a large bowl, mix the flour, add salt, turmeric, vegetable oil and gradually pour in warm water. Knead the dough well.
Roll out the dough on a flat surface into a rectangular layer 4 mm thick. Spread the cold filling over the entire surface and roll the layer with the filling into a roll.
Cut the roll with a sharp knife into slices 1-2 cm wide and fry each slice in vegetable oil for 5 minutes, turning once, until golden brown.
Sbiten
You will need:
- water - 1 l.;
- honey - 150 g;
- sugar - 150 g;
- cloves, cinnamon, ginger, cardamom - 15 g each;
- bay leaf - 2 pcs.;
Preparation
Mix honey with water and boil for 20 minutes, add spices and boil for another 5 minutes. Now you need to make burnt sugar. To do this, pour 1 tbsp into a saucepan. l. water and 3 tbsp. l. sugar, stir and heat until the sugar caramelizes. Strain the drink and add burnt sugar to it.
