Beetroot with walnuts has an unusual taste, and in combination with sour cream it will be appreciated by true gourmets. The soup is very light and satisfying at the same time.

  • - 4 medium beets
  • - 4 walnuts
  • - ground black pepper
  • - salt
  • - 1 tsp. Sahara
  • - olive oil
  • - 100 g sour cream (or natural yogurt)

Instructions

Step 1

Peel and cut the beets into small cubes or circles. Fry the workpiece in olive oil for 5-7 minutes on both sides. Beets must be constantly stirred or turned over so that they do not burn. For frying, it is best to use a high-sided pan.

Step 2

In the process of frying, add salt, pepper and 1 teaspoon of sugar to the beets. Then transfer the workpiece to a saucepan and fill it completely with water. Bring to a boil and cook for 20 minutes. If you want to make the beetroot more satisfying and thicker, add small carrots, cut into rings and a few peeled tomatoes to the pan.

Step 3

Once the vegetables are cooked, remove from heat and puree with a blender. Chop the walnuts. Season the soup with additional salt and pepper as you wish.

Step 4

Before serving, add some walnuts to each plate and season the beetroot with yogurt or sour cream. You can decorate it with half a boiled egg and herbs.
