This rich orange muffin is especially good with a scoop of vanilla ice cream.
It is necessary
- Cake:
- - 4 tablespoons orange jam;
- - 200 g of natural yogurt;
- - 4 eggs;
- - 235 g of fine brown sugar;
- - 270 g self-rising flour;
- - 3/4 tsp baking powder;
- - 235 g of butter;
- - 1 orange;
- - 2 and 2/3 tablespoons poppy;
- For glaze:
- - 7 tbsp. orange jam.
Instructions
Step 1
Remove the butter from the refrigerator to soften. Remove the zest from the orange using a fine grater or a special knife and squeeze out the juice - we need it for the glaze.
Step 2
Preheat the oven to 160 degrees. Prepare a brick mold by greasing it with oil. If you're baking in silicone, just sprinkle it with water.
Step 3
Heat 4 tablespoons of jam for a few minutes (you can use the microwave) to make it thinner. Let cool for a couple of minutes, use a mixer to combine with yogurt. Let the mixture cool a little more.
Step 4
Combine all other ingredients in another container and mix them thoroughly with a mixer until smooth. Pour in the jam and yogurt mixture and mix again quickly.
Step 5
Pour the dough into a mold and place in the oven for 70-75 minutes. If the cake is browned ahead of time, cover it with foil to prevent it from burning.
Step 6
Heat the icing jam and orange juice in the microwave. Mix until smooth.
Step 7
Allow the finished cake to cool for 10-15 minutes in the mold. Then transfer it to a wire rack and cover with the orange mixture.
