Pour granulated sugar into a large saucepan or deep bowl, add water and bring to a boil over low heat. While gently stirring the syrup, wait until the sugar is completely dissolved.
Put the persimmon slices in the resulting syrup. Cook the jam for 50-60 minutes over low heat, stirring gently with a wooden spoon or spatula.
Add citric acid and some vanillin. Boil the jam for another 10 minutes.
Remove dessert from heat and let cool.
