Instructions
Step 1
Prepare the meat: peel from films and tendons, cut into 2 parts. Marinate: mix vodka and olive oil, salt and spices, rosemary. Leave the meat for half an hour. The main thing in cooking lamb or mutton is pickling. It has such an effect on meat that the rack after roasting remains surprisingly juicy and aromatic.
Step 2
Prepare a side dish. To do this, melt the butter in a frying pan and fry the zucchini and eggplant semicircles until soft. Cut the tomato crosswise from the side opposite the stalk, sprinkle with olive oil and bake in the oven for 20 minutes. Peel the prepared meat from the marinade and fry in butter on both sides until tender (about 10 minutes on each side).
Step 3
Prepare the sauce. The marinade should be strained. Add finely chopped half tomato and onion. Leave to marinate for 10 minutes. Add water, boil for a short time so that the vegetables do not lose their shape, and the alcohol has time to evaporate.
Layer zucchini and eggplants on a plate, pour over tomato sauce and sprinkle with slices of soft cheese. Place a baked tomato next to it. Add toasted rack and garnish with herbs.
