Okroshka is a popular Russian dish. This cold soup is perfect for hot summer days as it is a great thirst quencher. Okroshka is very useful, since it is not subjected to heat treatment, which means that the vitamins that make up vegetables are preserved. The dish can be vegetable, meat and even fish.

For the first recipe: - 2 potatoes; - 2 cucumbers; - 1 bunch of radishes; - 100 g green onions; - 2 hard-boiled eggs; - 1 tsp table mustard; - kvass; - sour cream; - salt, sugar; - dill to taste. For the second recipe: - 4 glasses of berry syrup, such as lingonberry; - 2 glasses of kefir; - 2 potatoes; - 2 cucumbers; - 1 bunch of radishes; - 3 hard-boiled eggs; - salt, sugar and herbs to taste. For the third recipe: - 500 g of smoked chicken; - 1 bunch of radishes; - 2 potatoes; - 2 lightly salted cucumbers; - 2 hard-boiled eggs; - kvass; - greens; - salt

Instructions

Step 1

To make vegetable okroshka, boil the potatoes first and then cut them into cubes. Then cut the radishes and fresh cucumbers in the same way. Chop the green onion finely, grind it with salt. Boil the eggs, finely chop the whites. Mix the yolks with some of the sour cream, salt, sugar and mustard. Pour kvass into the mixture. Put the egg whites and finely chopped dill mixed with vegetables into deep bowls, pour the kvass mixture and add the remaining sour cream.

Prepare the vegetables as directed in the first recipe. Combine them with finely chopped eggs and dill. Fill the berries with water, let it boil for 5 minutes, cool, strain, add sugar, kefir and stir. Put vegetables in plates, cover with fruit-kefir mixture.

You can also cook chicken okroshka. To do this, wash the potatoes, boil, peel, cut into small cubes. Chop the herbs finely. Place potatoes and herbs in a bowl, salt and stir. Cut the eggs and cucumbers into cubes, grate the radishes. Remove the skin from the smoked chicken, chop the meat. Combine cucumbers, chicken, eggs, radishes and potatoes. Salt, fill with kvass.
