Chocolate-lemon soufflé is a quick version of a delicious dessert. In this recipe, you can replace lemons with lime or orange - all citrus fruits will work. Can be served warm or chilled. In the first case, you get delicious hot chocolate, thicker around the edges of the glass, and in the second - a dense, airy soufflé.
It is necessary
- - 100 g of dark chocolate;
- - 100 g of sugar;
- - 3 eggs;
- - 3 tbsp. tablespoons of cocoa powder, brandy or citrus liqueur;
- - 2 teaspoons lemon zest;
- - 1 tbsp. a spoonful of lemon juice;
- - a pinch of salt.
Instructions
Step 1
Break the chocolate into pieces, add the lemon zest, melt in a water bath. Please note that dishes with chocolate should not come into contact with hot water.
Step 2
Divide the chicken eggs into yolks and whites.
Step 3
Add cognac or liqueur, lemon juice, egg yolks, sifted cocoa powder to the melted chocolate. Beat this mass with a mixer.
Step 4
Whisk the whites separately with a pinch of salt. Add sugar without stopping whisking. Strong peaks should form. Transfer the mixture to the chocolate mixture, stir in with a mixer at medium speed.
Step 5
Transfer the chocolate mousse to cups, place in the hot oven. Bake for 15 minutes at 160 degrees. Chill a little, put in the refrigerator for 3 hours.
Step 6
Garnish the chocolate-lemon soufflé with lemon zest and grated chocolate. If you are not afraid to eat raw eggs, then you do not need to bake the soufflé, but put it in the refrigerator until it is completely cooled - you will get a delicate chocolate mousse.
