  • - butter - 200 g;
  • - chocolate - 200 g;
  • - cookies - 100 g;
  • - icing sugar - 2 tbsp. spoons;
  • - gelatin - 1 tbsp. the spoon;
  • - vanilla sugar - 1 sachet;
  • - any jam.

Instructions

Step 1

First, you need to crush the cookies to a flour state. For cheesecake, you can use any cookie - the main thing is that it crumbles easily. Melt half of the chocolate in a water bath and mix with cookies until smooth.

Step 2

We line the detachable form with parchment, pour the resulting "dough" in an even layer and tamp it well. We put in the refrigerator for half an hour to solidify.

Remove the butter from the refrigerator and let it soften.

Step 4

Pour gelatin with a quarter glass of warm water and leave to swell. Then we heat in a water bath until complete dissolution.

Step 5

Beat cottage cheese, icing sugar, butter and vanilla sugar with a mixer until a thick homogeneous mass is formed. Mix a few tablespoons of the mass with the previously dissolved gelatin and mix well. Then pour in a thin stream into the rest of the curd mass and beat again.

Step 6

Pour the curd mass into a mold on the frozen crust. We put in the refrigerator for 4-5 hours until it hardens completely.

Step 7

After this time, remove the cheesecake from the refrigerator. Spread the jam on top with an even layer. Melt the remaining chocolate and pour over the cheesecake. We put in the refrigerator for another 1 hour. After that, carefully remove it from the mold and transfer it to a dish.
