American cheesecake without baking, it turns out, is popular in our country as well. Russian chefs have managed to remake and supplement cheesecake recipes in a new way. This is due to saving money in the first place, since cream cheese is a very expensive pleasure. With a modernized composition, this dish turns out to be no worse, which we will be convinced of.

- sugar - 250 g;
- shortbread cookies - 300 g;
- heavy cream - 350 g;
- butter - 130 g;
- cream cheese - 300 g;
- instant gelatin - 3 tablespoons;
- lemon juice - 5 tablespoons;
- white wine - 100 ml;
- vanilla sugar - 2 sachets;
- grated lemon zest;
- chocolate chips for decoration.
Instructions
Step 1
Grind the cookies or grind them using a blender. Melt butter until liquid in the microwave or multicooker. Combine the butter and cookie crumbs, add a packet of vanilla and stir well with your hands until smooth.
Step 2
Line a split cake pan with foil or parchment, and place the shortcrust pastry prepared earlier on it. Try to spread it over the surface in an even layer. Tamp the dough so that it compresses into a cheesecake base. Place the resulting base in the refrigerator along with the mold until it hardens.
Step 3
Make a delicate cheesecake cream. Place the gelatin in a saucepan and cover with cool wine. Leave on for half an hour to swell. Place the cheese in a tall container, add 50 g of sugar, a packet of vanillin and lemon juice. Beat the mixture with a mixer.
Step 4
Put a pot of gelatin on fire and add 100 grams of sugar, stirring constantly, until completely dissolved. Bring the mass to a boil, but do not boil. Pour the cooled gelatin into the beaten cheese in small portions, stirring slightly.
Step 5
Whisk the rest of the sugar and cold cream into a lather. Combine both creams into a single whole. Pour the resulting filling onto the base and refrigerate to freeze the zizcake. Then take it out, separate it from the mold with a knife, decorate with grated chocolate and zest, etc.
