Zrazy prepared in this way look original, they have a very appetizing look, they will decorate any festive table. And most importantly, they are very juicy and tasty.
You will need:
- 750 grams of boneless saiga meat,
- 1 lemon
- 1/2 cup sunflower oil
- ground black pepper,
- 7-8 juniper berries,
- 1 pickled cucumber
- 150 gr of fresh pork lard with layers,
- 2 large onions,
- dried mushroom,
- 1 teaspoon ground red pepper
- green parsley,
- 2 tablespoons of lard,
- 2 tbsp. tablespoons of wheat flour,
- salt.
Cooking method
Take the meat, remove the film and veins, wash and cut into pieces. Then beat off the pieces well.
Take pork lard with a layer of meat, cut into pencil-thick strips, roll in ground black pepper, red pepper and crushed juniper berries, peel the cucumber and cut into the same strips. Peel the onions and cut into rings.
Grate the beaten meat with spices, salt, sprinkle with lemon juice and put in a container for 30 minutes.
Then, on each of the broken pieces, put a strip of lard, cucumber and onion rings, roll up, pierce with a wooden skewer or wrap with thread. Dip the zezy in wheat flour, put on the fat that has been very heated in a frying pan and fry on all sides. Transfer to a saucepan along with the lightly fried onion, add the mushroom, add a little water, close the lid and simmer for 40 minutes. When the meat is tender, you can add a little sour cream.
Serve with beets, cereal side dishes, pasta or potatoes.
