Fish rolls in bacon are an excellent appetizer for a festive table. This dish is also suitable for the most ordinary lunch or dinner, since it is prepared quite quickly. Finno-Ugric peoples have been preparing this dish from salmon for a long time, but pike perch and any other dense and not very fatty fish will do. In some recipes, fillets play the role of filling; in others, grated cheese, mushrooms or other crushed products are wrapped in fish cakes.

It is necessary

    • 1 kg lean fish fillet;
    • 0.5 kg sliced bacon;
    • 1 kg of tomatoes;
    • breadcrumbs;
    • rosemary;
    • garlic;
    • salt;
    • pepper;
    • olive oil;
    • butter;
    • 300 g of pickled mushrooms;
    • 300 g of cheese;
    • 300 g shrimp;
    • twine (not synthetic);
    • pan;
    • oven and 2 baking sheets.

Instructions

Step 1

Turn on the oven. While you are cooking the tomatoes, it will have time to warm up to 200 ° C. In this case, tomatoes play the role of a side dish; theoretically, you can do without them.

Step 2

Chop the tomatoes into large chunks. Small ones can simply be divided in half, large ones - into 4-6 parts. Place the pieces on a baking sheet, salt, pepper and sprinkle with breadcrumbs. The layer of crackers should be thin, it is only needed to form a crust. Put a small piece of butter (about 5 g) on top. Place the baking sheet in the oven and wait half an hour.

Step 3

Rolls can be of different sizes. Cut the bacon and fillet so that the bacon can be wrapped around the fish, with one edge of the plate overlapping the other. Wrap the roll and tie it with twine. Small rolls can be tied only in the middle, and if they turn out to be long, then it is better to do this in two places. Any thick thread can be used as long as it is not synthetic. Synthetics in the oven can melt and ruin your culinary masterpiece.

Step 4

Preheat a skillet and add some vegetable oil. It is best to use olive. Crush an unpeeled chive and place in a skillet. It will add a delicious scent.

Step 5

Place the rolls in the skillet. Let them brown lightly. Remember to turn them over gently so that they brown evenly.

Step 6

Peel the rosemary sprigs. There should be as many of them as rolls. If there is no rosemary, secure the rolls with skewers. However, in this case, the aroma will not be so seductive.

Step 7

Remove the ready-made tomatoes from the oven, and put another one in place of the baking sheet, with rolls laid out on it. The temperature should be constant and kept at 200 ° C. It is enough to hold the dish in the oven for a quarter of an hour. Take out the rolls and remove the threads from them.

Step 8

Serving depends on whether you serve the rolls as a hot dish or a cold snack. In the latter case, cool the dish. You can serve it without any sauce and even without a side dish. If you are preparing a hot snack, take care of the white wine sauce. Pour some wine into the skillet you used to brown the rolls. Evaporate about a third. Add butter, salt and pepper. Let the sauce simmer for about ten minutes.
