For 8 skewers you will need:

  • 1, 2 kg of fat tail lamb,
  • 400 gr. onions
  • 1/2 cup 9 percent vinegar
  • 50 gr. cow oil
  • 1 good bunch of green onions
  • 1 kg small red tomatoes,
  • 1/2 cup plum sauce
  • 20 pcs. dried barberry,
  • 1 lemon
  • dill,
  • parsley,
  • cilantro greens
  • ground black pepper,
  • salt.

Cooking method

Process the meat well, remove excess fat and films, cut into pieces convenient for your skewers, put in a non-metallic container, salt, sprinkle with black pepper, put grated onion, parsley, vinegar or juice squeezed from lemon, stir, close lid and put away for 6 hours in a cool place.

If you took the meat of a young ram, then you don't need to add vinegar at all, it will be soft anyway. Prepare a brazier, prepare coals from resin-free wood.

Chop the prepared meat on skewers, coat with oil and fry until fully cooked over hot coals without fire, constantly turning the skewers.

When the kebab is ready, put it on a beautiful dish and decorate with herbs.

Be sure to serve the kebab with green onions, cilantro sprigs, beautifully chopped tomatoes, lemon slices, plum sauce and barberry.
