Low-calorie, but very satisfying soup with apples and cauliflower is perfect for a dietary menu. It is a storehouse of nutrients that are essential for a healthy body.
It is necessary
- Ingredients for 8 persons:
- - 50 g butter;
- - 4 small onions;
- - 1.5 kg of cauliflower;
- - 8 apples;
- - a tablespoon of lemon juice;
- - 2 cubes of vegetable broth;
- - 1.5 liters of milk;
- - 8 tablespoons of low-fat cream;
- - olive oil;
- - a few sprigs of thyme (leaves only);
- - salt to taste.
Instructions
Step 1
Chop the onion, disassemble the cauliflower into small inflorescences. Peel 6 apples and chop finely.
Step 2
In a large skillet or a heavy-bottomed saucepan, melt the butter, lightly fry the onions. Add cauliflower and apples, fry for 5 minutes.
Step 3
Add bouillon cubes to the pan and pour in the milk. Bring to a boil, reduce heat to low and simmer all ingredients until cauliflower is done.
Step 4
Using a blender, turn the soup into puree, salt to taste.
Step 5
Before serving, cut 2 apples into thin strips and mix with lemon juice so that they do not darken.
Step 6
Pour the soup into bowls, add one spoonful of cream to each plate, stir the cream in a spiral for beauty, put a small amount of apples on top, add a little olive oil (literally 5-6 drops per plate) and thyme leaves.
