Pizza carbonara is based on the pasta of the same name. The ingredients combine these dishes: rich creamy sauce, bacon, egg and parmesan. Classic toppings complement mozzarella and tomato sauce, a must when baking any Italian pizza.
The Right Pizza Dough: The Classic Recipe
When baking pizza, not only the filling is important, but also the base - the dough cake. For its preparation, high-quality products are needed: finely ground durum wheat flour, filtered water, fresh yeast.
Ingredients:
- 1, 5 cups wheat flour;
- 3 g yeast powder;
- 0.5 tsp Sahara;
- 1 egg;
- 100 ml of water;
- 25 g refined olive oil;
- a pinch of salt.
Before kneading, a sourdough is prepared from sweetened water and yeast. It should stand for 15 minutes at room temperature. When the liquid is bubbling, you can add other ingredients to it: eggs, salt, oil. Pre-sifted flour is added in portions and grinds well.
Knead the dough with your hands until smooth. Cover it with a napkin and leave for half an hour. In a warm kitchen, the dough will double in volume.
Sauces and toppings: step by step preparation
Until the dough reaches the desired condition, prepare sauces: tomato and cream.
Ingredients:
- 100 ml cream 20% fat;
- 1 egg white;
- 1 ripe meaty tomato
- 2 cloves of garlic;
- 1 tbsp. l. tomato paste;
- 25 g olive oil;
- a bunch of parsley;
- salt;
- freshly ground black pepper.
To prepare tomato sauce, tomatoes, herbs and garlic are whipped in a blender, the mass is wiped through a sieve, mixed with olive oil, tomato paste, ground black pepper and salt.
Making a creamy sauce is more difficult. It is necessary to separate the proteins, beat them into a strong foam, combine with the cream and, stirring, heat over low heat until thickened.
Assembling pizza: step-by-step process
The peculiarity of carbonara pizza is its high calorie content. The filling combines a large amount of cheese with thinly sliced bacon and a lightly fried egg.
Roll out the dough on a board sprinkled with flour. The recommended diameter of the pizza is 30 cm. Transfer the tortilla to a baking sheet or in a mold, grease with olive oil and prick with a fork in several places. Make a side from a thin strip of dough.
Grease the surface generously with tomato sauce, lay out the onion, cut into thin rings, pieces of bacon, slices of mozzarella. Pour cream sauce over the filling, sprinkle with Parmesan flakes, release a whole chicken egg into the center.
