Step 1
Take a chicken carcass weighing 1.5 kilograms. Cut the knee joint, then cut it in half across the breast. Now make a brine: dissolve 70 grams of salt and 140 grams of sugar in a liter of water. Dip the prepared chicken carcass in the prepared brine for an hour and a half. Cover with a lid.
Step 2
Wash, peel and cut 4-5 potatoes into large slices. Do the same manipulations with one carrot. Boil these vegetables lightly in salted water. They should be almost soft.
Step 3
Peel one large onion and chop it into 4-6 pieces. Preheat a skillet, pour 2 tablespoons of olive oil into it. Saute the onion until golden brown, then add 4 small cloves of garlic, lightly crushed with a knife. Simmer over low heat for about a minute. Add 1 tablespoon sugar and simmer for another minute. Now pour a quarter glass of wine into the onion-garlic mixture. Wait for it to evaporate. Top up with the same amount of wine, evaporate again over high heat.
Step 4
Grease a metal or ceramic dish with olive oil (1 tablespoon), put boiled potatoes and carrots in it. Lightly salt and pepper, put the onion-garlic mass on top of the vegetables.
Step 5
Remove the chicken from the brine, rinse, and gently pat dry with a towel. Season the inside of the carcass with a mixture of spices: a pinch of black pepper, turmeric, coriander, curry. Place the chicken on top of the vegetables and onions with garlic, brush with 1 tablespoon of olive oil, sprinkle with dill.
Step 6
Send the chicken and potato dish to the oven at 200 ° C. Leave it there for an hour and a half. Remove the cooked chicken from the oven, transfer to a platter and serve hot.
