Step 1

Potatoes need to be washed, peeled, cut into medium-thick plastics, rinsed under running water to remove excess starch.

Step 2

In a skillet in olive oil, fry the potatoes for 4 minutes. The fire should not be large so that the potatoes do not burn. Add to it the onion, cut into small cubes. Fry, stirring occasionally, until the potatoes are cooked. Put it on a plate and set it aside.

Step 3

Fry the diced vegetables in the pan in which the potatoes were fried. When the vegetables are ready, add potatoes and onions to them, stir and turn off the heat.

Beat eggs with salt and pepper in a large bowl, add the fried vegetables to them and mix.
