    • To prepare the dough:
    • 130 g softened butter;
    • 100 g sugar;
    • 100 g ghee;
    • 4 eggs;
    • 250 g flour;
    • 40 g starch;
    • 2-3 oranges.
    • To prepare curd and berry cream:
    • 150 g blueberries;
    • 75 g sugar;
    • 375 g low-fat cottage cheese;
    • 375 ml cream;
    • 15 g cream thickener;
    • 50 g icing sugar.

Step 1

Whisk in softened butter and sugar until creamy. Add one egg at a time, whisking continuously.

Step 2

Sift flour through a sieve, add starch to it and mix everything. Add this mixture to the beaten butter and eggs and knead the dough.

Step 3

Wash the oranges and pat dry. Rub the zest from one orange and remove the skin from the rest. Squeeze the juice out of the fruit.

Step 4

Combine orange juice and zest with dough. Leave the dough at room temperature for half an hour.

Preheat the electric waffle iron to medium heat. Brush the entire surface of the waffle iron with a thin layer of melted butter.

Step 6

Pour three tablespoons of dough onto the bottom surface of the waffle iron and close the device. Bake the cakes until golden brown.

Prepare any cream for the cakes. You can, for example, make a waffle cake with cottage cheese and berry cream out of them.

Sort out and wash the blueberries, set aside two tablespoons of berries. Cover the berries with sugar and let sit for thirty minutes. After the blueberries are infused, mash them or rub through a sieve.

Step 9

Mash the curd with a fork and stir in the puree from the berries. Whip the cream with a thickener using a mixer and mix with the berry-curd mass.

Step 10

Set aside a fourth of the cream. Take six ready-made chilled waffle cakes. Spread them with curd and berry cream and lay on top of each other.

Step 11

Decorate the top of the waffle cake with the remaining cream using a pastry syringe, add the berries and sprinkle with powdered sugar.
