Oatmeal cookies, familiar to a large number of Russians from early childhood, can be made at home. Such baked goods will not only be more delicious, but also provide room for the imagination of the culinary specialist, since the recipe for oatmeal cookies can be supplemented and improved using the simplest ingredients.
Rum and vanilla cookies
To make oatmeal cookies with rum and vanilla, take 200 g of flour, 200 g of butter, 2 eggs, 1.5 cups of fine oatmeal, 1 tsp. slaked soda or baking powder, a handful of raisins, nuts or dried apricots, as well as rum and vanilla to taste.
Pre-soften the butter, then grind it with eggs and sugar, stir thoroughly and combine with oatmeal, soda, vanilla and raisins (nuts / dried apricots), previously soaked in rum. Then add flour into the mixture, mix the resulting dough well, put it in a bowl and tighten its edges with cling film for 30-40 minutes.
The dough for oatmeal cookies should be infused for an hour - this is necessary to maximize the swelling of the flakes.
Cover the baking sheet with special baking paper greased with butter, and make small cakes from the dough and put them on a baking sheet. Leave large gaps between them, as oatmeal cookies tend to increase in volume during the baking process, as a result of which they easily stick together.
Place the baking sheet in an oven preheated to 180 ° C and bake the cookies for 15-20 minutes. Simply top the finished treat with liquid chocolate obtained from a chocolate bar melted in a water bath - milk, black or white (optional).
Oatmeal cookies with cherries
To prepare oatmeal cookies with cherries, you will need 250 g of chopped oatmeal, 250 g of butter, 300 g of flour, 230 g of sugar, 2 eggs, 1 tbsp. liquid honey, 1 tsp. baking powder and 100 g of dried cherries. Soften the butter and mash it with a fork in a bowl, then add sugar to it and beat the mixture until smooth, adding eggs at the end. Then pour honey into the mixture and beat the ingredients thoroughly again.
You can make the oatmeal even tastier by frying it in a dry frying pan for 3-6 minutes before adding it to the dough. Sift flour, mix with baking powder, add to the mixture and stir, then add oatmeal to the dough and mix it again.
The dough for oatmeal cookies should be well kneaded until a thick, uniform consistency is easy to handle.
If desired, honey in this recipe can be easily replaced with boiled condensed milk or peanut butter, which will make the baked goods more tasty and original. Pour dried cherries into the finished dough and mix thoroughly so that the berries are evenly distributed throughout the dough. Put the dough in the refrigerator for half an hour to cool, then sprinkle the baking sheet with water and cover with food parchment.
Remove the chilled dough and form into small balls. Place them on a baking sheet at a sufficient distance from each other, then gently press each ball with your palm and bake the cookies in the oven at 180 ° C until golden brown.
