This cookie is based on oatmeal and dates. When it cools down, it is cut into squares. You can store it at room temperature, but stay fresh for a long time in the refrigerator.
It is necessary
- For the test:
- 1/4 cup brown sugar
- - 1/2 cup olive oil
- 3/4 cup oatmeal
- - 3/4 cup flour + 2 tablespoons
- 1/2 teaspoon ground cinnamon
- - fresh nutmeg
- - a pinch of ground cloves
- - 1/4 teaspoon baking soda
- For filling:
- - 1 1/2 cups pitted dates, chopped
- - 3/4 cup water
- - 1 teaspoon finely grated orange or tangerine zest

Step 1
While you are preparing the cookie dough, preheat the oven to 400 C. To prepare it, you need a 20 * 20 cm baking dish. Grease the bottom and sides with oil.
Step 2
Take a small saucepan and pour water into it. Add dates and zest. Bring to a boil and cook for 5-10 minutes, until the mixture thickens. Then put it aside.
Step 3
Meanwhile, in a large bowl, combine granulated sugar and olive oil together. Add oatmeal, flour, spices, baking soda and salt. Mix well. The resulting mixture should resemble coarse crumbs.
Step 4
Take half of the resulting dough, transfer to a mold and tamp along the bottom.
Step 5
Then apply the date filling gently and evenly. Place the other half of the dough on top and tamp well.
Step 6
Bake the cookies in the oven for 25 minutes or until light brown. Let cool after baking. When it hardens a little, cut into squares.
Step 7
You can take these cookies with you to work or for a walk. It is good for a snack, as well as for those who are losing weight and do not want to give up sweets.
