Instructions
Step 1
Soak pearl barley in cold water a few hours before cooking. The longer the cereal is infused, the shorter the period of time it will cook. After that, drain the water, and rinse the barley. Transfer it to a saucepan, pour 700 ml of boiling water. Add 1 level tablespoon of salt, bring to a boil and cook at low temperature, with the lid closed, until tender, for 30-40 minutes.
Step 2
Meanwhile, rinse the meat under running water and cut into small pieces. Peel the onions and carrots. Cut the onion into half rings, and the carrots into small cubes.
Step 3
Take a frying pan and pour sunflower oil into it. When it's warmed up well, transfer the meat to a skillet and fry, stirring occasionally, until golden brown.
Step 4
Then add the onion to the meat and fry it until golden brown. Add the carrots and sauté for another 5-7 minutes. After that, pour 100-150 ml of water into the pan, reduce the temperature to medium and simmer the meat with vegetables until it becomes tender. At the end of stewing, put green peas, after draining the liquid from it, bay leaf, black pepper and salt to taste. Mix everything and cook for about 5 minutes at the lowest temperature.
Step 5
When the meat is ready, transfer the frying to a saucepan to the boiled pearl barley, mix thoroughly and bring to a boil. Simmer over the fire for a few minutes. After that, the pearl barley porridge can be divided into portions and served along with fresh salad and chopped herbs.
