With the onset of cold weather, cabbage is fermented for the winter in many homes. But this appetizer is relevant not only in its pure form. Many healthy dishes can be prepared from it. For example, sauerkraut borscht turns out to be very rich and tasty.

It is necessary

  • - Beef with bone (you can take ribs) - 300 g;
  • - Potatoes - 5 pcs.;
  • - Sauerkraut - 0.5 kg;
  • - Medium-sized beets - 3 pcs.;
  • - Onions - 1 pc.;
  • - Sugar - 2 tsp;
  • - Acetic essence 40% - 0.5 tsp;
  • - Tomato paste - 1, 5-2 tbsp. l.;
  • - Sunflower oil for frying;
  • - Parsley greens - 0.5 bunch;
  • - Celery - 0.5 bunch;
  • - Garlic - 4-5 cloves;
  • - Bay leaves - 2 pcs.;
  • - Ground black pepper;
  • - Salt.

Instructions

Step 1

Rinse the beef and lower it into a saucepan. Pour in 4-5 liters of water and bring to a boil. Cook the meat until tender, about 40 minutes.

Step 2

Peel potatoes, beets and onions and rinse under running water. Cut three potato tubers into strips and leave two whole. Dip all the potatoes into the cooking pot and cook until tender. After that, remove two whole tubers from the pan, remember them by turning them into mashed potatoes, and return them back.

Step 3

Place the sauerkraut in a saucepan, bring to a boil and continue to cook at moderate temperature, covered. Grate the beets on a coarse grater, add sugar and vinegar to it. Mix everything together.

Step 4

Take a frying pan and pour sunflower oil into it. While it is heating, cut the onion into thin quarter-rings. After that, place the onions in a skillet and sauté until golden brown. Add the beets to the onions and cook for about 5 minutes. Add tomato paste, a few pinches of ground black pepper and simmer for 2-3 minutes. Transfer the finished frying to a saucepan and cook for half an hour.

Step 5

Meanwhile, peel the garlic cloves, chop finely or pass through a garlic press. Chop parsley and celery. 10 minutes before the borscht is ready, add bay leaf, salt to taste, chopped herbs and garlic to the pan.

Step 6

When the borsch with sauerkraut is ready, remove it from the stove and let it brew for a little, literally 10-15 minutes. After that, pour the dish into deep bowls and serve along with garlic donuts or brown bread croutons.
