  • - 60 g wheat flour
  • - 1 pinch of salt

Step 1

First you need to make a crumb from shortcrust pastry, or streusel. Mix softened butter with sugar, beat everything thoroughly, then add almond and wheat flour, as well as salt, mix everything thoroughly and put in the refrigerator for 1, 5 hours. After the indicated time, take out the dough, crumble it and put it back in the refrigerator.

Now let's prepare the dough. Cut the softened butter into cubes, send them to the mixer, beat, add warm milk, yolk, salt and sugar. Whisk all ingredients thoroughly. Gradually add flour to the dough, knead the tough dough, put it in a bowl and cover with cling film, then refrigerate for 1 hour.

Preheat oven to 200 degrees. Take out the dough from the fridge. On the table, roll it into a layer 1-2 cm thick. Put the dough on a baking sheet or in a baking dish, level it, make small sides. Place the apricot tart dough in the oven for 30 minutes.

Now it's time to prepare the filling for the tart. In a mixer, beat the cottage cheese with the egg, gradually add the icing sugar. You should get a homogeneous fluffy mass.
