  • Table vinegar:

  • Apple vinegar:
  • - 1 kg of apples;
  • - 1 liter of water;
  • - 1 glass of sugar or honey;
  • - a slice of rye bread;
  • - 20 g of yeast.
  • Grape vinegar:
  • - 200 g of sugar;
  • - 1.5 liters of water;
  • - 1.5 kg of grape pomace.

Instructions

Step 1

Table vinegar

To make ordinary homemade vinegar, dissolve sugar or honey in water and boil for 20 minutes in a wide bowl, preferably enameled. Cool to 40-50 ° C.

Step 2

Put brown bread in a warm solution, add yeast and, covered with gauze, put in a warm place for 2-3 days. Pour the fermented liquid into glass bottles, add a few raisins to each and plug the necks with a cloth or cotton wool. Leave at room temperature. After a week, the homemade vinegar will be ready to eat.

Step 3

Apple vinegar

Rinse the apples and cut into small pieces (or grate). Fold the mixture into a wide clay, glass or enamel container, add boiled water at room temperature, honey, brown bread and yeast. Stir well and leave uncovered in a warm place for about 10 days. Do not forget to stir the contents of the container periodically with a wooden spoon.

Step 4

After 10 days, strain the contents of the container through cheesecloth, pour into a glass jar, add another 100 g of honey or sugar, stir. You just have to cover the jar with clean gauze, tie it and put it in a warm place for 1, 5-2 months, then strain the apple cider vinegar and pour it into glass bottles, which will need to be corked with clean corks. Vinegar can be stored for several years, although by the end of the term its beneficial properties and special aroma will weaken. When making apple cider vinegar, you can do without yeast, then the first fermentation (before straining) will take longer.

Grape vinegar

To prepare grape vinegar, you just need to mix in a glass jar the pomace remaining after pressing the grape juice with an equal amount of warm boiled water, add sugar (200 g per three liters of the mixture), cover with dry gauze and leave for 3-4 months in a warm place. Strain the finished vinegar and bottle.
