Fresh cucumbers go on sale immediately or one day after they are harvested. Very often in trade organizations or in procurement organizations, the question arises of how to preserve cucumbers for a long time, as they quickly flabby and turn yellow.

Step 1

Take a large, dry earthenware dish and place the cucumbers in it. Fill the cucumbers with well-washed and thoroughly dried river sand, cover tightly with a lid and bury in the ground in the cellar.

Step 2

Take young cucumbers and cut them into not very thin slices. Store tightly in small glass jars and sprinkle each row of cucumbers with a little salt. The top and bottom row in the jar should be made of a dense layer of salt. Close the jar tightly with a plastic lid and put it in the refrigerator or basement. Soak cucumbers in water for a while before use.

Step 3

Freshly picked cucumbers can be kept fresh for three to four weeks. To do this, it is enough to put them in a container with the sharp ends down and pour 3-8 centimeters of cold spring water. The more often you change the water, the longer the cucumbers will stay fresh.

Step 4

There is one interesting way to preserve cucumbers. Plant the cucumbers in the same garden bed with the cabbage. When the cabbage head begins to curl and a cucumber appears next to it on its lash, then, without tearing it off, place it in the head. The cabbage will cover the cucumber and it will develop inside the cabbage. Fresh cucumber will be inside the head, as if in a case. Lower the cabbage into the basement or cellar; if necessary, you can get completely fresh cucumbers in the middle of winter.

Step 5

To keep the cucumbers from drying out, wash them thoroughly with boiled water and wipe them off with paper towels. Separate the egg white from the yolk and coat the cucumbers with it (white), so that an impervious film for moisture will appear on them. Such a natural film, unlike plastic, allows the fruit to breathe, therefore cucumbers are well stored even without a refrigerator in a dark, cool place.

Step 6

Some villagers use this method: they fill a wooden barrel with fresh cucumbers and in autumn they lower it to the bottom of an ice-free reservoir with cold running water. In winter and spring, cucumbers are obtained at their best.
