The process of making wine is based on the fermentation of fruit and berry juices. The quality and taste of homemade wine depends not only on compliance with the recipe, but also on the conditions of its storage.
Instructions
Step 1
Pour ready-made homemade wine for storage only in clean, preferably darkened glass bottles. The main enemy of wine is oxygen, it converts alcohol into vinegar. Therefore, always cork wine tightly with natural cork.
Step 2
Place bottles of wine in a cellar or a special cabinet, where the same temperature is always maintained at 10-12 C, and for strong sweet drinks 14-16 C. Store white and rosé wines at a lower temperature. After the homemade wine has finished fermentation, bottle it for at least a few weeks to fully mature.
Step 3
Keep your homemade wine in a cool, well-ventilated, dark place. Air humidity should be at least 60–80%. Place the bottles of wine horizontally so that the drink washes over the cork, then it will remain tight and will not dry out. Protect wine bottles from shaking, low temperature and vibration in order to preserve the true wine bouquet for a long time.
Step 4
Do not pour wine from an unfinished bottle into another container if you want to preserve it. Store the opened bottle of white wine in the refrigerator for several days. Red wine can be kept at room temperature for up to three days. Opened bottles with fortified or sweet wine last longer - about two weeks.
Step 5
Do not store wine with fresh or pickled vegetables, as a natural homemade product quickly absorbs odors.
Step 6
Place wine bottles upright for several hours before serving. If sediment, tartar, coloring matter - the so-called "shirt" of the drink, do not shake the wine on the inside of the bottle, carefully turn the bottle upright and wait until the sediment sinks to the bottom. Then gently pour the homemade wine into the glasses.
