Step 1

Prepare raw materials - select only ripe, not spoiled fruits. It is not necessary to wash the fruit, since the surface contains the necessary fermentation substances.

Step 2

Crush the berries in an enamel bowl or squeeze the juice using a juicer. Pour the mixture into a 2/3 glass bottle. Place the container in a warm place for 4 days (temperature should be about 22-24 ° C). Stir the mixture 2-3 times during the first two days. At the end of the term, the cake will settle to the bottom, and the juice will rise.

Step 3

Strain the berry juice through several layers of cheesecloth into an enamel bowl to clear it of the pectins in the peel, as toxic tanol is formed from them during fermentation. Then bring the sugar content of the juice to the required concentration of 20-25%. In most fruits, the sugar content is at the level of 10%, therefore, about 100-250 g of sugar per 1 liter of liquid must be added to the juice. This does not apply to grapes, since this berry has a sugar content of about 16-25%.

Step 4

Pour the clear juice into a clean, narrow-necked container - oak, glass, earthenware. Please note that foam will form during fermentation. Close the cookware with the perforated stopper. Insert a hose into it through which carbon dioxide will escape. Instead of a stopper, you can pull a rubber glove over the neck. Dip the other end of the hose into a jar of water. Leave the juice at room temperature until the end of fermentation, when bubbles stop coming out through the hose. Soak the wine for about 2-3 weeks before clarifying it.

Step 5

Pour the young wine gently into glass bottles without stirring up the formed sediment. Seal bottles with natural cork. Leave the wine for at least 3-4 months in a dark, cool place with a constant temperature. Store the bottles horizontally to allow the drink to wash over the cork.
