Hummus is very popular in the Middle East. This is a healthy and tasty pasta that is eaten both separately and spread on bread.
It is necessary
- - within 1 tbsp.;
- -lemon 1 pc.;
- - sesame paste 1 tablespoon;
- - sesame or olive oil;
- -salt;
- -seeds of cumin;
- - paprika, black pepper, pinch of asafoetida.
Instructions
Step 1
Soak the chickpeas overnight. Drain the water, rinse the beans well, then fill with clean water and send to boil. As soon as it starts to boil, remove the formed foam and let it simmer for another 15 minutes. Then drain the broth, fill it with water again and cook over low heat until tender.
Step 2
Once the chickpeas are soft, drain the broth, but do not pour it out. Set aside some of the boiled beans for garnish. Grind the chickpeas in a blender, adding the broth until the consistency of thick semolina is obtained. Then squeeze lemon juice into the paste, add salt, sesame paste, spices.
Step 3
Pour in the oil in a thin stream, whisking constantly. Adjust the amount of oil to obtain the desired creamy structure to your liking. Add lemon sock, too, depending on your taste.
Step 4
Put hummus on a dish, garnish with whole beans, herbs, sprinkle with paprika and pine nuts. Hummus goes well with vegetables, both fresh and fried, boiled, pickled.
