Hummus is an important dish in the cuisines of the peoples of the Near and Middle East. Hummus is also popular in Italy, Spain, Greece. This is a puree of chickpeas, seasoned with sesame or olive oil, with the addition of aromatic spices. Also, classic hummus is not complete without tahini - sesame paste, which you can cook yourself.
It is necessary
- For three servings:
- - 450 g of chickpeas;
- - 50 g of tahini;
- - 20 ml of olive oil;
- - 10 ml lemon juice;
- - 5 g smoked paprika;
- - 5 g of cumin (cumin).
Instructions
Step 1
Chickpeas need to be soaked in cold water overnight. The next day, put the chickpeas to boil in the same water in which they were soaked. Cook over low heat for 2 hours until the chickpeas are tender.
Step 2
Drain the liquid from the chickpeas, but retain 1 cup of liquid. Place the chickpeas themselves in a blender, add olive oil, chop until smooth.
Step 3
Add tahini (aka tahini) to the chickpeas, gradually grind to a smoother consistency. If necessary, you can add the liquid that we left just in case.
Step 4
Add cumin and paprika to the resulting puree, mix again. By the way, if you could not find tahini on sale, then prepare this paste yourself - fry the sesame seeds until golden brown, grind with ordinary vegetable oil.
Step 5
Be sure to serve classic hummus with olive oil and whole soft chickpeas. Additionally, sprinkle with paprika on top.
