The Chinese brewing method best reveals the aromas of high-altitude whole-leaf varieties. For a teapot with a volume of 250-350 ml, prepare 2 tablespoons of tea. Heat the teapot (preferably porcelain). Add dry tea leaves and let it warm up in warm for a couple of minutes. Fill with water, the temperature of which should not exceed 92 ° C. Expect about a liter of liquid for a 250 ml kettle. Pour water into a container and almost immediately start pouring into a separate cup or jug. This is necessary in order to mix weakly brewed tea and tart at the end of preparation and serve everyone a drink of the same strength. Pour the second portion of the tea leaves without insisting. Wait 1 minute for the third time, 2 minutes for the fourth, and 3 minutes or more for the fifth brew. Not all varieties can withstand 5 brews, some are designed for only 2-3.

To prepare tea in English, prepare a teapot at the rate of 200 ml for each participant and warm it up well. Pour the dry mixture (one teaspoon per glass of water) and pour boiling water over it. Leave for 5 minutes and pour into cups without diluting with water. Add lightly warmed cream or milk if desired.

The Indian method is characterized by intense brewing. Take small-leaf or granular tea, brew it tightly, mix with milk, add a large amount of sugar and pour from a high height from glass to glass until copious foam appears.
Step 4
Masala is an Indian tea with spices. Pour 2 cups of hot water into a teapot, add sugar, 3 dessert spoons of tea, 4 black peppercorns, 2 cloves, a quarter spoon of brown cardamom, a handful of green cardamom, a little ginger and anise. Bring the mixture to a boil and add a glass of milk. Boil for 2 minutes over low heat.

In India, there is another popular way of making tea: in 320-350 ml of water, put 3 dessert spoons of large leaf tea, brew for 5 minutes, cool, add half a lemon, cut into slices, sugar and a few ice cubes. Drink in small sips.
