Cucumbers are frequent guests on the table. They are traditionally salted, pickled, used as a component of salads, hodgepodge and okroshka. But from these vegetables you can cook many delicious dishes that can please even gourmets. Such dishes include stuffed cucumbers, for which you can use a variety of fillings.
Fresh cucumbers can be stuffed with various salads (fish, meat, vegetables) and served as a snack. But if the cucumbers are stuffed with nutritious or light minced meat and baked in the oven, you get a complete main course, tasty and aromatic.
To cook stuffed cucumbers in the oven, you need the following ingredients:
- 4 cucumbers (large);
- 400 g of boiled meat;
- 100 g of onions;
- 50 g of parsley;
- 30 ml of vegetable oil;
- 100 g sour cream;
- ground black pepper;
- salt.
For this dish, large overgrown cucumbers are suitable, which must first be peeled from the hard skin. Then cut the cucumbers into halves and carefully remove the core with the seeds with a tablespoon.
Next, cook the minced meat. To do this, rinse any meat (beef, pork, chicken is suitable), dry and boil until cooked in salted water, then, if necessary, separate the meat from the bones and pass the pulp through a meat grinder. Peel the onions, chop finely and save in vegetable oil. Rinse the parsley greens, dry, chop and also lightly fry in vegetable oil. Then stir sautéed onions and greens with minced meat from boiled meat. Season the filling with salt and black pepper and mix thoroughly.
Stuff the prepared cucumber halves with the filling. Then place the cucumbers, cut side up, on a greased baking sheet. Pour each half with a teaspoon of sour cream and bake for 20 minutes in the oven at 200 ° C.
You can cook stuffed cucumbers according to another recipe, for it you will need:
- 1 kg of cucumbers;
- 1 kg of meat (beef or pork);
- 500 g Jerusalem artichoke;
- 100 g of carrots;
- 100 g of onions;
- 50 ml of vegetable oil;
- 50 g of grated cheese;
- ¼ h. L. ground black pepper;
- salt.
Wash large cucumbers, dry and cut into slices about 3-4 centimeters thick. Then carefully remove the core from the blanks. You should get some kind of cucumber rings.
Rinse the meat well under running water, then dry it with a paper towel or napkin and pass it through a meat grinder. Wash and peel the carrots. Then grate on a coarse grater, and finely chop the onion peeled from the husk. Salve the onions and carrots prepared in this way together in vegetable oil. Rinse Jerusalem artichoke thoroughly, peel and grate, then combine with minced meat and sautéed vegetables. Add pepper and salt, mix everything well.
Grease a baking sheet or flat baking dish with vegetable oil and place the cucumber pieces vertically, stuff each with cooked minced meat, drizzle with vegetable oil on top and sprinkle with grated cheese. Then place the stuffed cucumbers in the oven and bake for 20-30 minutes at 200-220 ° C.
