This appetizer turns out to be very light, fresh and appetizing. It can be served both to a festive table to surprise guests, and to a regular dinner as an additional dish.

It is necessary

  • - 3 large fresh cucumbers;
  • - 300 grams of soft curd cheese;
  • - 100 grams of lightly salted trout;
  • - 100 grams of canned olives.

Instructions

Step 1

First of all, for stuffing, you need to properly prepare the cucumbers. To do this, they are thoroughly washed, and then "tails" are cut off from the vegetables. It is best to select in advance the largest and evenest fruits that will look aesthetically pleasing in the appetizer.

Step 2

Next, each cucumber will need to be cut into two equal parts and carefully remove the pulp from them. This can be done with a small knife or even a comfortable teaspoon. The main thing is not to damage the outer skin of the cucumber. Then blot the vegetables with a paper towel to remove excess moisture.

Step 3

Any soft curd cheese is suitable for the filling. It is best to choose it without any additional additives (like sun-dried tomatoes and garlic). Fill the cucumber halves with the selected cheese and grease the edges for greater stickiness.

Step 4

Lightly salted trout is cut into thin long slices and also placed inside the cucumber on top of the cheese.

Next, the halves of the vegetable are carefully connected and fastened. Now it remains only to cut them into small even pieces according to the principle of rolls. On top of each of them, you can also put a small piece of the remaining fish and half an olive.

The appetizer is served chilled.
