Step 1
You will need fresh nuts to make this savory snack. Buy inshell nuts by weight from the store, so they will be fresher and more flavorful when you peel them. Also use fresh cucumbers and carrots.
Step 2
Crack the walnuts and peel the kernels from the shells and films. Place in a small, high-rimmed bowl and use a pusher to chop as hard as possible. You can use a ceramic mortar or blender if you have one. Peel the pine nuts and mix with the chopped walnuts.
Step 3
Wash the cucumbers, dry and carefully cut off the tip from both ends. Then cut each cucumber lengthwise into a boat and remove the center. Wash and peel the carrots. Grate the carrots on a coarse grater. You can grate it into strips on a Korean carrot grater.
