Gooseberry compote is the most common and simplest version of this drink. For him, a different-sized gooseberry with cut stalks and sepals is used - the berries are sorted out, washed, pierced with a stainless steel fork and laid out in jars. Then 40% sugar syrup is boiled separately and the jars of gooseberries are poured over them a little less than to the brim. The filled cans are covered with lids and pasteurized: half-liter - 10 minutes, liter - 15 minutes.
Step 2
No less popular is the gooseberry compote prepared by hot pouring without pasteurization. To prepare it, gooseberry berries, prepared and laid out in jars, are poured with hot sugar / fruit syrup or hot water, left for 5 minutes and all the liquid is drained. This manipulation is repeated two times, and on the third, water / syrup is left and the jar is sealed. For pouring gooseberry compote, you can also use raspberry, strawberry, currant and strawberry juice, on which 40% sugar syrup is prepared.

To prepare an assorted gooseberry compote, you should slightly cut the prepared berries, pour boiling water for a few minutes, then drain and cool under cold water. After that, the gooseberries are stacked in layers in jars - in the process, they are shifted with apple slices, currants, strawberries, raspberries, cherries, and so on. Then the compote is prepared using one of the above methods and closed with sealed lids.
Step 4
For children, you can cook gooseberry and orange compote. For a half-liter jar of gooseberries, you need one orange peeled, cut into circles. Such compote does not need to be pasteurized or cooked - it is quite enough to pour the contents of sterilized cans with boiling 40% sugar syrup. In order for any gooseberry compote to retain its useful and taste qualities for a long time, you need to cover the freshly sealed cans with a warm blanket and leave them under it for a day, and then keep them in the refrigerator for another day. After that, the preservation can be stored even in a fairly warm room.
