Pear compote is a great drink to quench your thirst in the summer. In addition, it will warm you in winter, filling the room with summer scents and memories. Light and tasty, this compote will become the most favorite in your family.

- Based on 1 liter of water:
- - 10 pears;
- - 250 grams of sugar;
- - citric acid on the tip of a knife;
- - vanillin;
- - cinnamon and cloves (to taste).

Step 1
To prepare compote, take hard fruits, with good skin, no dents, cracks or rot. They may not be quite ripe, but in the compote they will become aromatic and soft, giving it all the freshness and sweetness.

Sterilize the jars over boiling water or rinse them with hot water and send them to dry in the oven. Also sterilize the iron lids by keeping them in boiling water for 2-3 minutes.
Step 3
Small fruits can be put in jars whole, and large ones can be cut in half or into quarters. In this case, the peel of pears is not peeled off, so the slices will better retain their shape and taste.
Step 4
Place the pear slices in the jars so that the fruits fill the jars by about a third. Do not tamp the pears tightly so as not to crush them, otherwise they will turn into porridge in the compote. It is better to put whole pears on the bottom of the jar, and slices around the edges.
Step 5
Boil water, pour it into jars of pears, cover with lids and let stand for 10-15 minutes. Then drain the water into a separate saucepan, boil and refill the jars. This is necessary so that the pears give the syrup their sweetness and aroma.
Step 6
After the pears settle to the bottom of the cans, drain the water again and bring to a boil, adding sugar to it, and a pinch of vanillin to taste. Lovers of the spicy taste of compote can also add a pinch of cinnamon and cloves. Some housewives add orange or lemon zest to the finished compote. The taste is sour, spicy and perfectly quenches thirst in the summer heat.

Pour the pears, roll up the cans with lids, put them in a warm place on the lids, wrap them well. When the jars are cold, they can be turned over and sent to the closet or refrigerator for storage.
