Dry the washed tangerines with paper towels, then cut them in half. We transfer the tangerines to a large saucepan and fill with hot water, leave for 10-15 minutes. This step softens the zest and removes the bitterness.

After half an hour, fill the tangerines with cold water and leave overnight at room temperature.

For cooking, we need sugar syrup. It is prepared very simply. Pour 250 ml of water into a ladle or small saucepan, after boiling, add 500 grams of sugar to the water and boil for 10 minutes.

Drain the water from the settled tangerines. Fill with sugar syrup (hot) and put under pressure for 3.5 hours.

Step 6

After 3, 5 hours, dissolve 500 grams of sugar in the remaining volume of water. Pour tangerines in syrup with sugar water, put on low heat. After boiling, remove the foam, stir. Cook at low boil for 20 minutes.

Step 7

Remove the saucepan from the heat and leave for three hours. Then put it back on low heat, bring to a boil and cook for another 15 minutes. Remove from heat and let stand for a couple of hours, then boil again for 15 minutes. Five minutes before the end of cooking, add the juice of one lemon to the jam, but this is optional. The jam is ready, you can taste it and close it in jars.
